Goat’s cheese salad with figs (or grapes) – 1 portion


• Spinach (handful)

• Wild rockets (half of the amount of spinach)

• Watercress (the same amount as wild rockets)

• Red pepper (1/2 pepper) chop it in a small, square pieces

• Cherry tomatoes (3-4 small ones): cut them into 4 small piece

• Figs (use grapes if you don’t like or have figs), sliced in 3 pieces/ 5 big grapes in halves

• Goat’s cheese: “Abergavenny soft” is more suitable option

Seeds and Nuts:

• Seeds: handful of sunflower

• Walnuts: 5-7 big halves


Sauces:

• Extra Virgin Oil (for taste)

• Ginger powder (if you have)

• Honey (a big drop on cheese)


Preparation (10-15min):

Mix spinach, wild rockets, watercress, chopped pepper and tomatoes. Add some seeds, walnuts (small pieces) and Olive oil with a bit of ginger powder. Mix it all thoroughly.
Place small amounts of goat’s cheese on medium sliced figs (or grapes), put a big drops of honey on top of each fig (or grapes) with cheese and place halves or smaller pieces of walnuts on top of the cheese. Place those little ‘fig/cheese/walnut’ pyramids into an oven (200C) for 7-12min (keep an eye on them). Once the cheese starts melting slightly (not too much) and walnuts looks slightly roasted in dark brown colour , take them out of the oven and put them all on the salad. Bon appetit!
